Charlie's Portabella Brioche Burgers

You will not miss the meat in this burger. Trust me, it is finger lickin' good. The inspiration for these burgers came from some Portabella sliders that my boyfriend is in love with at the local Ipic theater. So one night after a movie he decided he was going to try his hand a making his own full sized version at home. 1000 times better than the theaters!


Ingredients:

1 large Portabella Mushroom cap
1 fried egg
2 slices crispy bacon
Mild goat cheese
Arugula
Tomato
Brioche Bun
Olive oil
Balsamic vinegar
Salt & Pepper
Granulated Garlic
Granulated Onion

Coat the mushroom cap with olive oil and balsamic vinegar. Season the mushroom with salt, pepper, granulated garlic and granulated onion. Grill mushroom to desired tenderness. Brush Brioche buns with olive oil and toast on grill.
The build: Brioche bun bottom, Portabella mushroom cap, fried egg, crispy bacon, goat cheese, arugula, tomato, Brioche bun top.
**I am not a fan of goat cheese so I leave that off my burgers and add some avocado instead.

Now make sure you have some napkins handy because this is one of those, "the messier, the tastier" burgers. Enjoy!
