French Onion Soup

I love French Onion Soup! I use the recipe from the Better Homes and Gardens, red and white cookbook as my base then jazz it up a bit. I like my soup a bit more herby and peppery than the recipe calls for so I add thyme and ground pepper to the onions while they are sauteing. I used homemade beef broth that I had saved from some crock pot roasts and that seemed to give it a bit more depth by itself. After tasting the soup it needed a little something so I added a few shakes of all purpose seasoning. I topped it with some fresh rolls that I had toasted slightly, and some grated Swiss cheese. I baked them in the convection oven for 10 mins on 375 until the cheese was melted and bubbly. Make sure that you use oven friendly bowls for melting the cheese.
