Cake Roll With Berries


I made this cake , that I found in Taste of Home Magazine, to take to my brother's house for dinner. Everyone agreed that it was good recipe but next time maybe some lemon flavoring in the cake or the cream would give it a bigger punch. I was also thinking some jam mixed into the cream would give it another layer of flavor.

The cake itself is very dense and a bit chewy (not sure if I over beat the eggs) but it stood up to the rolling. I would recommend having a jelly roll pan but I was able to use a big cake pan well enough. The cream is definitely not on a dieters list of things to eat but is creamy and has good flavor. I would recommend making half the recipe for the filling as I had a lot left over that I had to throw out. The filling is like nothing I have ever made before. The flour and milk mixture really threw me for a loop and I was surprised at how well everything came together. I will try this recipe again with a few tweaks of my own but overall a good one.
