Creamy Potato Leek Soup


This Potato Leek soup is very easy to make and very tasty. I added 3 cloves of garlic to the leeks. I also put about 2 cups of the soup in the food processor after I added the cream and before I added the bacon so that it gave a thick, creamy texture to the soup. I am not a fan of real soupy soups. The reviews I had read ahead of time said not to add any salt to mix but I found it needed a bit after all was said and done. I used low sodium chicken stock and 1 cup of my homemade stock from the freezer. This was the first time I had ever cooked with leeks and I think I like them! They have a very mild onion flavor. You just have to be sure to wash them good before using as they tend to be sandy in their top layers. The next time I make this recipe I think I will add some green onions into the mix to give it a tiny bit more of an onion punch. I topped the soup with some ground black pepper and shredded cheese before serving.
