Great Way to Use Leftover Mashed Potatoes

This recipe is very simple and very tasty.  I found this Salmon-Potato Bake in Rachael Ray Magazine. Basically, you slap some mashed potatoes on top of some seasoned salmon fillets and bake at 300 degrees for 10 mins or until done, then hit it with a bit of the broiler just to give the potatoes a bit of color.  The recipe calls for you to mix fresh dill into the potatoes, I just sprinkled some dried dill on top of the salmon so it didn't have such a prominent flavor.  It was a hit in our house!
