Roasted Potatoes and Sausage
I threw this together one night out of laziness and it turned out great! Anything that is a one pan dinner is perfect in my book for weeknight meals. Less dishes to wash...priceless.
4-5 medium yellow potatoes - cut in half and sliced
1/2 Walla Walla sweet onion chopped
1 red bell pepper chopped
1/2 Portabella mushroom chopped
2 white mushrooms sliced
2 brats or sausage of your choice
2 Tbsp Olive Oil
Salt and pepper to taste
Preheat oven to 425.
Heat 1 Tbsp olive oil in oven safe pan. (I use my cast-iron Le Creuset fry pan.) Place sliced potatoes in pan once oil is hot. Add the onions, bell pepper and mushrooms. Cook on medium-high until potatoes start to brown slightly. Add the remaining olive oil and stir. Slice brats and add to pan. Stir ingredients then place the pan in the preheated oven for 20 minutes. After 20 minutes, stir the ingredients and check the potatoes for tenderness. Place pan back in the oven for 15-20 minutes or until potatoes are cooked through.
Serve topped with some shredded cheese or sour cream. For a twist wrap the ingredients in a tortilla for a potato, sausage burrito.

This looks totally delicious. I love the combination of few ingredients with the use of only one pot! I'm sure you could vary it up with different veggies, too. Thanks for posting!
