Garlicy Bruschetta

I have been wanting to make something with all the fresh tomatoes I have been getting from my garden the last few days and what a better dish to make than bruschetta.  I made this one up as I went and it turned out great!

7-8 small tomatoes diced (I used Juliet Hybrids and Early Girls from my garden)
1 green onion diced
1 red pearl onion or shallot
4 fresh basil leaves chopped
1 Tbsp olive oil
2 tsp balsamic vinegar
Dash garlic powder
Ground pepper and sea salt to taste
5 roasted garlic cloves chopped
Baguette or crusty bread sliced and toasted
Italian cheese blend

Toss ingredients together and let marinade on counter for 20 minutes.  Slice the bread, butter the tops and toast in oven until slightly brown.  Top toast with Italian cheeses and bruschetta blend.  Enjoy!
