Natures Bounty

This year has been a bumper crop for tomatoes.  Everyday I am picking at least 5 tomatoes off of the plant.  My Early Girl plant is starting to turn red now too.  We are getting more than we can eat!  I am thinking about canning them tomorrow.  We don't have enough for a big canning production but I would hate for them to go to waste.  I may end up roasting them down and freezing them instead.


Blackberries are both a blessing and curse in this part of the country.  They are like weeds, and you can't hardly kill them no matter what you try.  I have been taking advantage of them on my lunch breaks at work and picking them for jam.  My sister-in-law and I made some last year and it was really good.  I am working on my last jar so it is time to stock up for the winter once again!  I have been washing them and then freezing them on a cookie sheet so that they are not one large lump when we go to process them.  I have just over a gallon freezer bag full.  We had less than that last year and my sister-in-law has been bringing in her own harvest too so we should have a bunch of jars this year.  I am looking forward to giving canned goods away during the holidays.
