Spaghetti with Creamy Ricotta Pesto


This recipe has become a favorite in our house. It is so simple we make it for a quick dinner or a weekend lunch. I have not made the pesto from the recipe yet due to time constraints and the fact that it is so easy to find great tasting ready made pesto at the store.

I mix the ricotta and pesto together in a bowl and heat is slightly before putting it on the pasta, so that it does not cool it down. Then I add the pesto-cheese mixture to the pasta and add the Parmesan and mix well. It is as easy as that!

I have added sauteed chicken breast for a variation. Either way this one is a keeper for us!
