I took an extra day off from work this Thanksgiving holiday. A perfect day off to me is a quiet, clean house and a clean kitchen just waiting to make up some yummy things. The holidays and the colder weather always puts me in the mood to bake and make up quick fix dinners for the freezer as this time of year always seems to be busy, not to mention getting home from work in the dark does nothing for the motivation to cook up a big dinner that takes hours.
So today, I made chocolate chip cookies with a few Reese's Pieces thrown in. The recipe is from Better Homes and Gardens Checkered Cookbook. The only change I make to the recipe is to add about a 1/4 tsp more vanilla. (And the Reese's Peices today.)
Then, I made Pork Dumplings, with premade wrappers. I was not feeling up to the homemade ones. Once I get a Kichenaid pasta attachment or something that makes rolling dough easier I will make the homemade ones again. Until then, the premade ones are the way to go. I decided to try wrapping the dumplings in pairs rolled between plastic wrap this time to see if it would keep them from sticking together when thawing out. In the past they have stuck together and then torn before I cooked them. I am hoping this makes for an easier cooking experience.
